Ingredients:

  • 3 eggs

  • 3/4 cup granulated sugar

  • 1/2 cup brown sugar

  • 1 cup corn syrup 

  • 2 tbsp softened or melted butter

  • 1 tsp vanilla (and a little extra)

  • 1/8 tsp salt

  • 1-2 cups chopped pecans

Directions:

  1. Beat eggs

  2. Add sugars, syrup, butter, vanilla and salt

  3. Stir in chopped pecans

  4. Cut chilled pie dough to size of tart or cupcake pan. (I thin the cut crusts with a rolling pin for a light, crispy crust)

  5. Spray pan

  6. Lightly press crusts into pan

  7. Fill crusts almost full

  8. Bake at 350 for 15-20 minutes (depending upon tart sizes)

  9. Cool on rack allowing to cool completely

Bonus Tip:

Left over crust?

  1. Cut remaining dough into strips

  2. Brush with melted butter

  3. Dredge in sugar and cinnamon mixture 

  4. Twist strips and place on baking sheet

  5. Bake 12-15 minutes 

  6. Enjoy!
